Overthrow Hospitality is an award winning restaurant group based in Manhattan, New York City. What started as a collection of tight knit, heartfelt restaurants and bars in the East Village is now blossoming nationwide with several new projects currently underway. We are seeking talented hospitality veterans to build the opening team for our newest location as we join the Los Angeles community!
RESPONSIBILITIES AND AUTHORITIES:
- Practice honesty & integrity
- Maintain open communication with Head chef
- Complete all opening and closing duties as assigned
- Be mindful of the importance of personal hygiene and grooming
- Adhere to federal, state & local Health and Safety guidelines
- Extreme comfort in multi-tasking in high stress and fast-paced situations
- Ability to lead a kitchen without the immediate over watch of the Chef
- In-depth knowledge of food and above-average creativity when developing menus and recipes
- Exceptional organizational skills
SPECIFIC DUTIES:
- Maintain and strictly abide by current sanitation/health regulations and hotel requirements.
- Maintain complete knowledge of and comply with all departmental policies and procedures.
- Maintain complete knowledge of correct maintenance and use of equipment; use equipment and tools only as intended, properly and safely.
- Ensure that staff reports to work as scheduled; document any late or absent employees.
- Complete opening duties:
- Set up work station with required mise en place, tools, equipment and supplies according to standards.
- Inspect the cleanliness and working condition of all tools, equipment and supplies. Ensure everything meets compliances and standards.
- Check production schedule and pars.
- Establish priority items for the day.
- Transport supplies from the storeroom and stock in designated areas.
- Prepare all dishes following recipes and yield guides, according to department standards.
- Inform Chef of any shortages before the item runs out.
- Monitor performance of staff and ensure all procedures are completed to the department standards; rectify deficiencies with respective personnel.
- Minimize waste and maintain controls to attain forecasted food cost.
- Review status of work and follow-up actions required with Chef before leaving.
- Maintain a strong knowledge of all food & beverage offerings
- Take guest s orders and make appropriate food and wine recommendations.
- Accurately input orders into POS
- Anticipate guest s needs and respond promptly
- Interact in a courteous and professional manner with guests and co-workers
- Alert chef to all allergies or dietary restrictions
- Ensure accuracy of all guest checks and promptly process payments
- Notify management to any pertinent information related to the shift
- Follow all Health Department best practices notes that are found in each service station
- Prepare food for service (e.g. setting up mise en place, chopping vegetables or preparing sauces)
- Assist with kitchen operations: washing dishes, meal prep, expediting and serving in cooperation with Head Chef
- Ensure that food comes out consistently in high quality and in a timely fashion
- Comply with nutrition and sanitation regulations and safety standards
- Maintain a positive and professional approach with coworkers and customers
REQUIREMENTS:
- NYC DOH Food Handler's license required
- 1-3 years of similar experience, preferably in a vegetable-forward restaurant
- Ability to work in a standing position for long periods of time (up to 6-8 hours)
- Extensive knowledge of food, beverage and wine preferred
