Junior Sous Chef

YESS RESTAURANT
We are seeking commited and curious cooks for the recently opened YESS Restaurant. YESS has a fully open kitchen, led by chef Junya Yamasaki, with a custom charcoal grill and wood fired range. The cooks work in tandem with the servers as one team.

RESPONSIBILITIES

  •  Prepare and cook dishes from start to finish
  •  Expidite Services 
  •  Ordering and Farmers Market runs 
  •  Input to daily changing menus 
  •  Open fire and open charcoal grill cooking
  •  Learning new techniques – emphasis on ike jime fish, whole animal butchery, produce storage conditions, traditional pickling
  • Opportunity to learn deeply about local seafood, wild mushrooms and Japanese cooking/culture
  •  Communicating and collaberating with FOH staff before and during service
  • Assuring clean and efficient BOH work areas
  • Support fellow team members and foster a positive work environment
