Retort Operator

Job Description RESPONSIBILITIES Responsible for the safe handling of food products and ensures all paperwork and process data is filled out completely and accurately to include lot identification Responsible for final product canning and cooking processing step adhering to formulas and recipes to insure proper cook times and a safe product is produced Insures all Critical Control Points are satisfied and immediately report out of tolerance conditions Properly identify and inspect Retort Systems against specifications for correct application Properly identify and inspect the product against specifications for correct application and cooking times and recipe schedules Comprehend FDA Canning and Retort requirements and specifications, along with complying with Local and State Regulations for Retort Operations Inspects Retort processing equipment and verifies operational status and cleanliness. Set up, operate, adjust, clean, sanitize and shut down Retort processing machinery to include: Markem Image Can Date Code Printer Busse Loader Retort Units Busse Unloader Can Conveyor Systems Responsible for in-process checks and on-line documentation of Retort records and logbooks. Maintains a safe, healthy, and sanitary work environment by following GMP standards and procedures. Interprets production schedule and insures proper materials are in inventory and ready for use to include: Retort Cooking Bins Retort Bin Separation Sheets Ink for the Code Printer Assist and train other team members and temporary employees when time permits. Observes product quality and identifies non-conforming material as necessary. Verifies proper materials per recipe, weight and SOP Assists in break out duties as required Execute daily and weekly production schedules per the direction of supervision Meet daily production goals and standards Performs Sanitation Responsible for monitoring quality Comply with all company Quality, HACCP, GMP and Food Safety Standards Comply with all company safety policies and procedures Complete required production documentation including lot tracking, testing logs, QA forms and production reports. Operate pallet jacks and other material handling equipment Identify and communicate problems and production issues in a timely manner Interpret and adhere to all Standard Operating Procedures/Recipes and Formulas Perform specialized tasks at the direction of Quality Control, Testing or Research and Development personnel Other duties as assigned WORKING RELATIONSHIP Must have an attention to detail methodology Must perform in a high volume, extremely fast paced environment and be accurate to perfection Though reporting to a Production Manager, individual should be able to work independently upon task assignment Must be able to work seamlessly with others on an in-line production team Cross train into other production areas as required and defined by the Production Manager QUALIFICATIONS REQUIRED Read, write and speak English Basic computer skills to operate computer automated equipment Basic math skills add, subtract, multiply and divide Read and interpret weight scales and tape measures Excellent interpersonal skills must be a team player Must have an excellent work ethic and be a self-starter Good verbal and written communication skills Ability to lift up to 75 pounds Must be able to stand, sit, bend and kneel for extended periods of time Forklift Certification EXPERIENCE Basic knowledge or understanding of a manufacturing environment direct manufacturing experience not necessary Prior food manufacturing, compounding, blending, cooking and preparation experience is preferred, but not mandatory. Basic knowledge of autoclave or retort systems pressure cooking EDUCATION AND CERTIFICATIONS High School Diploma or G.E.D. is required Must complete the State of California Certification for Thermal Process/Retort Operation Compensation: $18.00 – $20.00 per hour DOE Lotus Pet Foods is a drug free workplace Job Type: Full-time Pay: $18.00 – $20.00 per hour COVID-19 considerations: LA County Public Health Safety COVID-19 Certified Employment Type: Full Time Years Experience: 1 – 3 years Salary: $18 – $20 Hourly Bonus/Commission: No
