Pastry Cook

MIRATE is a Contemporary Mexican Restaurant/Mezcaleria/Cocktail Bar created by Michelin-star chef Joshua Gil and Matthew Egan.

We are looking for a talented experienced pastry cook, Mexican pastry experience is a plus, classically trained is a must.

Pastry Cook

Job Summary: A pastry cook is responsible for preparing, baking, and decorating a range of pastries, desserts, and baked goods. They collaborate with the Culinary Director to create and execute menu items, ensuring high-quality presentation and taste. This role demands creativity, precision, and a deep understanding of baking techniques.

Key Responsibilities:

  1. Baking and Pastry Preparation:

    • Prepare doughs, batters, and fillings for various pastries and desserts.
    • Measure and mix ingredients according to recipes, ensuring consistency and accuracy.
    • Operate and maintain baking equipment such as ovens, mixers, and dough sheeters.
  2. Pastry Production:

    • Create and bake a variety of pastries, including cakes, cookies, bread, pies, and tarts.
    • Decorate and finish pastries with icing, glazes, chocolate, fruit, and other garnishes.
    • Ensure that all pastries are visually appealing and meet quality standards.
  3. Menu Development:

    • Collaborate with the Culinary Director to develop new pastry and dessert menu items.
    • Experiment with flavors, textures, and presentation to create innovative desserts.
  4. Ingredient Management:

    • Manage inventory of pastry ingredients and supplies, ordering as needed to maintain freshness.
    • Monitor food costs and portion control to minimize waste.
  5. Food Safety and Sanitation:

    • Adhere to strict food safety and sanitation guidelines to ensure the safety of the food products.
    • Maintain a clean and organized work area.
  6. Teamwork:

    • Collaborate with other kitchen staff, including chefs, sous chefs, and line cooks, to coordinate meal service.
    • Assist in training and supervising junior pastry staff.
  7. Quality Control:

    • Ensure the consistency and high quality of all pastry and dessert items.
    • Taste and evaluate products regularly to maintain standards.
  8. Creativity:

    • Stay up-to-date with industry trends and emerging techniques in pastry arts.
    • Innovate and create unique pastry and dessert items that can attract customers.

Qualifications:

  • Culinary education and/or pastry chef certification is preferred.
  • Previous experience as a pastry cook or baker in a professional kitchen.
  • Knowledge of various baking techniques, including bread making, cake decorating, and pastry artistry.
  • Attention to detail, creativity, and artistic skills.
  • Ability to work in a fast-paced environment and meet deadlines.
  • Strong teamwork and communication skills.
  • Knowledge of food safety regulations.
