Central Kitchen Manager K12

We provide healthy, delicious lunches for Private & Charter schools in Los Angeles.

We are ramping up for a very busy school year and need seasoned professionals.

The General Manager is responsible for the effective and efficient functioning of the operations at the Freshlunches Los Angeles facility within the guidelines established by Freshlunches.

The GM will lead a team of 45 full time and part time employees and is responsible for providing the highest professional standards possible.

DUTIES
Ensure Freshlunches meets and exceeds the needs of the customers and clients by providing high quality, cost effective food service.
Interview and hire BOH and FOH employees in accordance with corporate, Federal, State and local regulations.
Able to manage staff and logistics for up to 20 concurrent off-site events.

Ensure the correct food items are pulled for each off-site service.
Supervise, direct and manage production and service schedules for daily off-site events.
Maintain daily, weekly and monthly accounting and financial records.

Create and communicate financial reports.
Ensure compliance with all Federal and State labor laws at the facility
Prepare and monitor unit operating budgets.

Ensure financial goals are met.
Maintain safe and sanitary operation in accordance with Federal, State and local health regulations.
Develop, in conjunction with Freshlunches management, food standard programs, attractive menus meeting the needs of the customers of different ages (K-12, faculty and administration) as well as catering clients.
Establish relationships with clients and create effective communication channels with customers and client management to provide feedback on the overall success of the operation.
Achieve the highest standards in food and service
Create & Manage monthly K12 Menu Cycles
Experience with NSLP (National School Lunch Program and CACFP a huge plus.
Interact with accounting to ensure all invoices and payments are processed
Monday
– Friday with some weekend availability.
Maintain Service Standards
Be completely familiar with all Freshlunches food and service and operating standards.
Understand contractual service requirements.
Train all FOH staff on Freshlunches processes and procedures
Understand the logistics of servicing multiple off-site clients concurrently and the processes and procedures required to ensure success
Understand and implement uniform and grooming requirements for all onsite and off-site employees.
Be proficient in maintaining and handling complaints, customer comments.
Ensure service personnel follow proper portions control and process of menu items.
Maintain congenial and efficient flow of service during peak period times.
Interview, Hire & Train Employees
Create and monitor employee schedules
Conduct performance review.

Counsel and discipline employees
Complete and report payroll
Maintain Vehicle service records and ensure all vehicles in great operational condition
Food Production Supervision
FORECAST AND PLAN OPERATING NEEDS FOR FOOD AND SUPPLIES
ORDER, RECEIVE, AND INVENTORY OF ALL PRODUCTS AND SUPPLIES
Communicate and audit product specifications for food products to culinary staff.
Read, create and follow recipes and be able to effectively oversee hourly staff employees in their use
Know specific portion control standards of Freshlunches
Effectively control food production through consistent and correct use of production sheets.

Manage waste and overages.
Follow safe food preparation techniques.

Pay: Up to $70,000.00 per year
