(More information below)GENERAL SUMMARY:The Sous Chef is responsible for culinary preparation of Restaurant menu items to established standards of presentation, recipe cards, costing and consistency in all foods.
Assists in the training and supervision of the restaurant culinary staff.
Works with Chef team on sanitation standards in kitchen, storeroom organization, assists with the control of food and labor cost.
Ensures positive relations between front and back of the house staff.ESSENTIAL FUNCTIONS:Manages and maintains standards for food presentation, culinary prep, cleanliness and sanitation.Maintains standards by supervising and inspecting prep of all food items produced, assures that quality, consistency and costing standards are maintained.Coordinates needed supply requirements with Chef team, assures proper handling and rotation of food.
Assists with monthly inventory.Works with Executive Chef and FOH Management on all areas of guest satisfaction.Assigns Kitchen duties to assure timely service of menu items and coordinates scheduled staff to meet labor requirements for productivity, profitability, peak demand periods and maintaining sanitation standards.Maintains a healthy, team player atmosphere in culinary department by effective problem solving, team leadership and communication.Maintains standards of Alderbrook Resort & Spa and DepartmentAny and all other duties as assigned.SUPERVISORY RESPONSIBILITIES:Supervise the Culinary TeamCommunicate with the Chef Team regarding any performance issue encountered with Culinary Team.Supervise Kitchen and Patio cooks during designated shifts, delegate breaks as required.Ensure all interactions with and between coworkers are conducted in a highly professional and efficient mannerEnsure a safe working environment and attitude on the part of all employees in areas of responsibility.

Experienced in both European and American regional cuisine.
Knowledge of recipe development in areas of daily specials, cross utilization of product and current food trends.
Knowledge of all current local and state regulations of food handling, sanitation codes and storage procedures.Interpersonal: Demonstrates flexibility and a willingness to accept change, new procedures and constructive comments; ability to work/communicate effectively verbally and non-verbally with multiple operating departments.

Coordinates multiple tasks and meets production and service time schedules; follows instructions and recipes as neededEDUCATION, EXPERIENCE, REQUIREMENTS:Ideal candidate will possess a degree from a Formal Culinary Arts program, and have 2 years of supervisory experience in a 4 star hotel operation or fine dining establishment.
In addition, ideal candidate will have 5 years continued experience in areas of banquet production, saucier and fine dining.
Familiarity with local suppliers and regional ingredients a plus, and must be proficient in Microsoft Office Suite.
Must possess, or have the ability to obtain, a Food Handlers Card.COVID-19 Vaccination RequirementNorth Forty Lodging LLC requires team members to be fully vaccinated against COVID-19 (as defined by CDC).
