The Pastry Chef leads the Pastry team in the production and direction of preparing a variety of desserts, pastries and other sweet goods for the various outlets and events at The Resort at Paws Up. PRIMARY DUTIES AND RESPONSIBILITIES Responsible for the daily production of pastries offered at The Resort. Create new and exciting desserts to refresh our menus and engage the interest of members and guests. Prepare a wide variety of goods such as cakes, cookies and pies following traditional and modern recipes. Work closely with the Culinary leadership team to assist in creating menus that are unique and restaurant specific. Decorate pastries using different icings and toppings to ensure the presentation will be creative, unique and special for our guests. Carry out and monitor the production of pastry items to specifications and ensure that the portion size and quality of the dishes conform to the highest standard. Monitor stocks for baking ingredients such as flour and sugar and make appropriate orders within budget. Provide day-to-day guidance and oversight of Pastry team members; actively promote, train, coach and recognize performance. Keep up-to-date knowledge on all menu items including preparation, any allergens and alternative preparations. Maintain an orderly cooking station and adhere to health and safety standards. Schedule staff according to volume of business; understand how to flex when necessary to meet labor expectations; ability to adjust daily operations to be in line with the budget with final approval by Executive Chef. Keep Executive Chef promptly and fully informed of all problems or unusual matters of significance coming to his/her attention so that prompt and corrective action can be taken when appropriate. KNOWLEDGE, SKILLS AND ABILITIES High school diploma, GED or vocational training or job-related coursework Minimum of two years of experience as a Pastry Chef Proven ability to lead and manage a team Knowledge of world-class hospitality and service management Display a sense of urgency, strong attention to detail and a desire to learn valuable Culinary responsibilities Valid Montana food handler’s license Valid driver’s license and the ability to meet the company driving policy BENEFITS The position offered is full-time and year-round and located in Greenough, Montana.
