BOH Culinary Team Member

The Role

Responsible for showcasing Greenleaf through food. Working as a part of a dynamic team, the BOH Culinary Team

Member will cook, clean, and assist other Culinary Team Members in delivering beautifully crafted, quality food using the finest and freshest ingredients.

ESSENTIAL QUALIFICATIONS

  • Minimum of 18 years of age.
  • Ability to satisfactorily communicate verbal and written English with Guests, management and co-workers.
  • Ability to maintain complete knowledge of the following: o All cooking techniques which are required to prepare restaurant menu items. o All menu and special items, their preparation method/time, all ingredients and quality standards, taste, appearance, texture, temperature, garnish and method of presentation. o Correct maintenance and use of food serving and preparation equipment.
  • 1 year experience as a restaurant cook.

DESIRABLE CANDIDATES SHOULD HAVE

  • 2 years’ experience as a restaurant cook.
  • High school graduate.
  • Previous culinary training.
  • Valid California Food Handlers Card.
  • Certification in sanitation requirements.

ESSENTIAL SKILLS & JOB FUNCTIONS

  • Correctly prepare all foods served following standard recipes, working on several orders simultaneously.
  • Restocks food items and kitchen supplies; stores and rotates food properly and safely.
  • Operate cooking equipment such as griddles, slicer, etc.
  • Comply with all established standards, including personal safety, food safety, sanitation, personal hygiene, appearance, and uniform.
  • Observe proper food preparation and handling techniques.
  • Always keep work area neat and clean; cleans and maintains equipment, cooking surfaces and utensils used in food preparation.
  • Maintain superior level of professionalism.
  • Timely execution of all responsibilities and assignments.
  • Make preparation list of necessary food items.
  • Requisition all listed food items and transport from walk-in, etc. to assigned station.
  • Check quality and quantity of all stock and supplies.
  • Ensure a sufficient supply of all plateware for service.
  • Properly cover, label and change out all pans.
  • Store food items in their proper place.
  • Follow supervisor’s instruction.

SECONDARY FUNCTIONS

  • Follow maintenance program and cleaning schedule.
  • Alert KM, AKM, MGR and/or or BOH Supervisor as to any deficiencies of food items and equipment.
  • Notify management of any pertinent information related to shift activities.
  • Alert KM, AKM, MGR and/or BOH Supervisor as to any maintenance needs or safety hazards.

REPORTS TO

  • Kitchen Manager (KM), Assistant Kitchen Manager (AKM), Manager and BOH Supervisor.

WORK HOURS

  • Team members will be required to workday and/or evening shifts, both weekdays and weekends, and on holidays.

WORK CONDITIONS
BOH Culinary Team Member will work with various types of kitchen equipment including a grill, oven, knives, etc.
BOH Culinary Team Member will be required to participate in preparation of food.
BOH Culinary Team Member will be required to help store and re-stock items.
BOH Culinary Team Member’s will be required to clean and sanitized kitchen utensils, tools, containers, etc.

Physical Requirements
Ability to stand for long periods of time
Ability to lift up to 50 lbs.
Ability to kneel and bend
Ability to work off counter heights 33-38 inches
Ability to move through aisles of 36-42 inches and spaces as small as 12 inches
