Line Cook

This job ad is for a line cook position for a new wine bar located in Culver City. You would be part of a small crew working side by side with the Chef. The menu changes daily, weekly and monthly to highlight local produce and seasonal seafood. The cuisine touches on southern french dishes and northern italian recipes. The shift will start at 230pm and end at 1030pm. 

To start the day you will likely be prepping vegetables and fruits of all kinds and also picking herbs. The job requires that you work on your feet and sometimes lift things around 25 lb. You will know or learn how to break down many different kinds of fish. We also work with red meats from time to time and you will know or learn how to break down lamb. The prep work also consists of sauce making like vinaigrettes, aiolis and hot emulsions. 

The line work consists of 2 stations: hot and cold. cold line prepares salads, crudos, charcuterie boards and shucks oysters. hot line cooks fish, vegetables, lamb to order utilizing a fryer, flat top, oven and range. 

The most successful candidates will be those who can work in a clean and organized manor.
