Chic oceanfront boutique property is seeking an Executive Sous Chef to spearhead a restaurant-driven F&B program, with an emphasis on high level dinner execution. The coastal-inspired menu features luxury ingredients, sophisticated plating, and locally sourced ingredients. Ideal role for someone who has exposure to Forbes-rated or luxury hotels in the past, but looking to be part of a smaller non-union property that is more food focused.
Executive Sous Chef Responsibilities:
- Leading and mentoring a strong culinary team, including hands on in the kitchen and on the line
- Collaborate with and support the culinary management team
- Ensuring best practices for safety and sanitation in the kitchen
- Ensuring that all food meets the highest standards of quality and consistency
- Creatively contribute to seasonal menu changes and special event menus
- Assist with administrative responsibilities including but not limited to: ordering, inventory, scheduling, performance management, managing food and labor costs
Executive Sous Chef Preferred Requirements:
- 4+ years of cumulative culinary leadership experience (Sous Chef, Senior Sous Chef, Chef de Cuisine, Exec Sous)
- Prior experience in chef driven, James Beard, or Michelin kitchens is highly preferred
- Love for quality ingredients and scratch cooking
- Excellent communication skills and leadership qualities
- Composed in high volume periods
- Highly motivated, passionate, and have a sense of humility
- Exceptional standards for cleanliness, health, and safety
- Flexible schedule, including weekends, and on holidays
