Food Scientist

R&D

  • From conception to launch: contribute to new product development of conventional foods, functional foods, meal replacements, dietary supplements and medical foods
  • Research, develop, and/or review formulations for current and future products to ensure they meet claims, food safety standards, and quality requirements while delivering the targeted nutrition rigorously in line with company’s findings and science
  • Conduct experiments and produce sample products
  • Research, analyze, and validate current and new ingredients, manufacturing processes, packaging, and food technologies
    • Explore and design alternative manufacturing methods or improved ways of preserving, processing, packaging, storing and delivering foods, using knowledge of chemistry, microbiology, and other sciences
    • Study methods to improve aspects of foods such as chemical composition, flavor, color, texture, nutritional value and convenience
    • Search for substitutes for harmful or undesirable activities
    • Study the structure and composition of food or the changes food undergo in storage and processing
    • Research and qualify new raw materials and other ingredients from suppliers
    • Work on packaging innovation and technology
  • Record, analyze and summarize research data
  • Utilize formulation software to create and update formulations (ESHA Genesis)
  • Research new costreducing manufacturing processes that meet customer and regulatory requirements
  • Prepare product costings based on raw materials and manufacturing costs to ensure profitable products

Product specifications, Quality, and Regulatory Support

  • Establish product specifications for new and existing products
    • Computing percentages of ingredients, formulas and other factors by using mathematical and chemical procedures
    • Evaluate the nutritional value and sensory/organoleptic qualities of products, ensuring that flavors met specifications
  • Design, conduct function and sensory evaluation of new ingredients, flavors and finished products including stability studies
  • Support testing and quality evaluation of raw materials and finished products
  • Coordinate independent laboratory testing
  • Record research and operational data, maintaining records of testing result and other documents as required by state or other governing agencies

Communication and Managerial Responsibilities

  • Communicate effectively with relevant parties regarding food quality and safety concerns
  • Support the CMC function
  • Manage scientific or technical project resources (for example by ordering supplies to maintain inventories in laboratories)
  • Perform regular maintenance of laboratory and technical equipment
  • Manage and complete assigned research and development projects within specified timelines, following and executing a stagegate process
  • Ensure adherence to GMP and other regulators
  • Other duties as assigned

Qualifications

  • Master of Science in foodrelated sciences (e.g. food science/technology, food/chemical engineering, biochemistry)
  • Minimum of 510 years of experience in a food chemist position
  • Work experience with dietary supplements and in the medical foods category are highly recommended
  • Experience with plant based food development extremely desired
