Our Team members take pride in preparing and serving MARUGAME UDON’s delicious food. They know that in order to do this right, a clean and organized work area at all times is the key to success at MARUGAME UDON. By also consistently following the proper recipes and procedures and adhering to MARUGAME UDON’s high standards regarding food preparation, cleaning and sanitation, teamwork and guest service. Team Members help to ensure that the MARUGAME UDON guest experience is always the best it can be. Team members get to learn about and work at a variety of stations: Dough-making, Tempura, Order Taker, Prep, Busser, Cashier and Dishwasher. In each area they’re greeting and interacting with MARUGAME UDON’s guests directly, making their meals, while portioning out the ingredients to our standards. Team members’ responsibilities require them to be on their feet working while clocked in, unless on break. If they are not busy, they are expected to take on other tasks that need to be completed. They are expected to work with others as a team. Every Team Member is expected to follow MARUGAME UDON’s policies and procedures.

Essential Functions and Duties

Cook/Prep – BOH

  • Learn and becomes validated in one of or all of the prep area stations.
  • Following recipes accurately and maintaining food preparation processes such as cooking, marinating, seasoning, and mixing dough; dicing, cutting, and slicing vegetables.
  • Completing hot and cold food preparation assignment accurately, neatly, and in a timely fashion.
  • Preparing food throughout the day as needed, anticipating and reacting to guest volume.
  • Maintaining appropriate portion control and consistently monitoring food levels on the line.
  • Maintaining proper food handling, safety, and sanitation standards while preparing and cooking food.
  • Sets up the station and locates necessary utensils and equipment for food preparation.
  • Prepares all materials/ingredients needed according to recipe requirements and adheres to product sensitivity and plate presentation guidelines.
  • Ensures that all prepared food meets the standard of excellence.
  • Keep updated on recipe changes and produce assigned items exactly according to recipes.
  • Prepares items exactly according to recipe every time; using measuring devices and scales to control food costs.
  • Discusses production priorities with manager and line cooks.
  • Cleans and sanitizes the station throughout the shift.
  • Label, day dot, FIFO and stores all items produced.
  • Ensures equipment is operated and maintained consistently and properly.
  • Performs all duties and responsibilities in a timely and effective manner in accordance with established company policies to achieve the overall objectives of the position.
  • Maintains a favorable working relationship with all other company employees to foster and promote a cooperative and harmonious working climate, which will be conducive to maximum employee moral, productivity, efficiency and effectiveness.

  • Maintains the organization and cleanliness of the station
  • Applies company’s sanitation procedures
  • Keeps immediate supervisor promptly and fully informed of all problems or unusual matters of significance and takes prompt corrective action where necessary or suggests alternative courses of action which may be taken.
  • Maintains a favorable working relationship with all other company employees to foster and promote a cooperative and harmonious working climate which will be conducive to maximum employee morale, productivity and efficiency/effectiveness.
  • At all times provide a favorable image of MARUGAME UDON Restaurant to promote its aims and objectives and foster and enhance public recognition and acceptance of all of its areas of endeavor.
  • Lift and carry bags and cases of up to 70 lbs., up to 20 times per shift: places these items on high shelves.
  • Frequent bending and stooping
  • Works frequently in a hot and damp environment.
  • Hazards include, but are not limited to, cuts from broken glass and metal cans; burns, slipping and tripping.
  • Stands and uses hands for the entire 5-8 hours shift.
  • Able to understand and follow work schedule

Cashier/Busser (FOH)

  • Handles all transactions with guests using cash registers
  • Issues receipts, refunds, change, or tickets
  • Redeem stamps, gift cards, coupons, and discounts
  • Make sale referrals or specials, cross-sell products, and introduce new ones
  • Resolve guest complaints, guide them, and provide relevant information
  • Greet guest upon arrival and departure of the restaurant
  • Maintain clean, neat and organized check out areas
  • Assist with packaging take out items and complete accurate transactions
  • Pleasantly and professionally fulfill guest requests to ensure satisfaction
  • Maintains daily cleanliness and maintenance of the dining room and restrooms
  • Assist dishwasher with trash removable from trays in return window
  • Prepares dining room/patio areas
  • Cleans and sanitizes tables, chairs, restrooms throughout the shift.
  • Strategically place guests at proper tables to accommodate accordingly for maximum capacity during peak hours
  • Restock necessary tools and supplies for daily use throughout the restaurant.
  • Keeps immediate supervisor/ manager promptly and fully informed of all problems or unusual matters of significance and takes prompt corrective action where necessary or suggests alternative courses of action which may be taken.
  • Performs all duties and responsibilities in a timely and effective manner in accordance with established company policies to achieve overall objectives of this position.
  • Maintains a favorable working relationship with all other company employees to foster and promote a cooperative and harmonious working climate which will be conducive to maximum employee morale, productivity and efficiency/effectiveness.
  • Works as a team player by assisting other employees with duties as necessary or when shift becomes unexpectedly busy: Able to handle difficult situations in a polite and generous manner

  • Frequently immerses hands in water.
  • Maintains a clean kitchen, properly washes and sorts soiled dishes. Keeps dish area free of clutter and organized. Set up dish stations, including dish machines and sinks. Properly washes, stacks, and stores china, cookware, and storage containers.
  • Properly changes water of machines and sanitation sinks as often as required by business levels and health code.
  • Understand and adhere proper usage of chemical dilutions.
  • And all other duties as requested by a manager.

  • Providing friendly, quality guest service to each MARUGAME UDON guest

Miscellaneous

  • Consistently and accurately using prep sheets, cleaning list, and station checklists
  • Following MARUGAME UDON sanitation standards including washing cookware and utensils throughout the day
  • Cleaning equipment, as assigned, thoroughly and in a timely fashion according to MARUGAME UDON sanitation guideline
