Company DescriptionASC operates the on-mountain restaurants and the four mountains in the Aspen Snowmass area Snowmass, Aspen Mountain, Aspen Highlands and Buttermilk as well as the Five Star, Five Diamond property The Little Nell, the Limelight Hotel properties which operate in Aspen, Ketchum Idaho and Snowmass.

ASC also operates the rental & retail stores of Four Mountain Sports as well as D& E and the Award-winning Ski & Snowboard Schools of Aspen Snowmass.Job DescriptionThe Production Cook manages the production of large scale culinary projects for daily restaurant operations.Essential Job FunctionsResponsible for the safe handling of food product according to applicable health codes and lawsMaintains a clean and sanitary work environment, participate in pre and post shift cleaning and organization to include but not limited to: kitchen equipment, walk in fridge/freezer storage, dry storage, trash, recycle, mopping, sweepingPrepares & serve food items according to chef specificationsCreates and completes daily production and preparation listsAssists with storage of food deliveriesWorks independently and without direct supervisionMaintains par levels of commonly used recipes/dishesMaintains a safe & clean work environmentWorks any station within the assigned restaurant, with a high degree of accuracy and efficiencyReports potentially unsafe condition; Uses equipment and materials properly.Contributes to the creation of fresh and innovative daily specialsWorks as an active participant on the service line if requiredCommunicates with culinary management regarding par levels and production priorities during serviceCommunicates with Chef regarding the daily inventory and ordering processAssists chef with daily kitchen closing and cleaning procedures to include walk-ins and freezersResponsible for all aspects of the restaurant in the Chef’s absenceOther duties as assignedQualificationsMust be 18 years older3 years of progressive experience in a professional kitchen requiredKnowledgeable of all cooking methods and advanced knife skills requiredCulinary School graduate preferredPrior guest service experience preferred for server kitchens preferredExcellent written and spoken English required.

Spanish is an advantageServSafe or similar food safety course certification is preferredAbility to ski or ride at an intermediate level is required for employees of ski in/ski out restaurants in winterAdditional InformationSupervision Given and Received:Supervision Given: This position has no supervisory responsibilities.Supervision Received: Works under general supervision of the Restaurant Chef.

Receives continuing or individual assignments according to supervisor’s directions and may perform routine tasks.

Expectations of the quality, quantity and deadlines are clearly set.
