Sous Chef

About Us:

MAGARI, one of the newest additions to the Hollywood dining scene, is hiring a Sous Chef to join our team. Magari is a contemporary Italian restaurant, influenced by the flavors of Japan, featuring a menu crafted by Sicilian-born Executive Chef, Enrico Merendino. Our menu features crudo, antipasti, housemade pasta and a wood burning grill, prepared with high quality, seasonal ingredients.

About You:

The Executive Sous Chef will be responsible for the the daily culinary operations of Magari Hollywood. Primary responsibilities will be the ordering, receiving, preparation and execution of menu items to the highest standard of quality and providing effective leadership and direction for our culinary staff.

Responsibilities:

  • Manage day-to-day culinary operations in a professional manner.
  • Ensure the timely execution of all menu items consistent with specifications and to the highest standard of quality.
  • Control food cost and labor expenses consistent with budgeted goals.
  • Hire, train and manage culinary staff. Provide coaching and counseling as needed.
  • Manage food production levels to meet business needs and minimize waste.
  • Source products, negotiate pricing, perform inventories, place orders, receive and code invoices.
  • Schedule back of house labor to meet business needs and control expenses.
  • Menu development.
  • Maintain cleanliness and sanitation of the kitchen.
  • Participate in daily pre-shift meetings and assist in the training of front of house staff.
  • Maintain and upkeep kitchen equipment.
  • Create a positive work environment.
  • Qualified applicants will possess a minimum of two years experience as a Sous Chef in a fine dining restaurant.
  • Knowledge of Italian and Japanese cuisine is essential.

Minimum Qualifications:

  • Strong communication and organizational skills.
  • Effective leadership and positive demeanor.
  • California Food Handlers Manager Certification.
  • Proficiency in Microsoft Excel/Google Sheets
  • Proper knife skills and fish breakdown knowledge also preferred.
  • Knowledge in ordering from vendors such as Vesta, Chef's warehouse, etc. preferred.
